Put 10lbs of beef bones into a 6 quarts of cold water and leave overnight in the refrigerator.


Add a 1 lb flank steak, bring to a boil and cook for 10 minutes.


It’s going to be a long day. Make Bloody Mary’s for yourself and significant other.


Drain and rinse pot and bones. Return bones to pot, add 6 quarts water and bring to a boil. Skim surface of scum and fat. Stir bones at bottom from time to time. Add 3 more quarts water, bring to a boil again and skim scum. Lower heat and let simmer for 1 hour.


Prepare two halved unpeeled onions studded with 8 cloves, 2 halved unpeeled shallots and a large piece of unpeeled ginger.


Char clove-studded onions, shallots, and ginger under a broiler. Add 8 star anise and a cinnamon stick.


Tie charred vegetables, star anise, and cinnamon stick in a thick, dampened cheesecloth and prepare 4 parsnips cut in 2-inch chunks.


Add to the pot with 2 tsps of salt. Simmer for 1 hour. Remove flank steak and continue simmering broth, uncovered pot, for 4-5 hours. Add more water if level goes below bones.


Meanwhile, slice 1 lb of beef sirloin against grain into paper thin slices, about 2-by-2 inches. Slice flank steak the same way. Set aside.


In a small bowl, combine 2 thinly sliced scallions, 1 tbl spoon of chopped cilantro, and half the sliced 1 thinly sliced onion. In another bowl combine 1 thinly sliced onion and 1/4 cup of hot chili sauce.


Prepare soup toppings plate (to be served on the side when the soup is ready).

2 cups of fresh bean sprouts, 2 sliced chili pepper, 2 limes cut in wedges, some fresh mint and some fresh basil.


Soak 1 lb of rice noodles in warm water for 30 minutes. Drain and set aside.


When broth is ready, discard bones. Strain broth through a colander lined with a double layer of damp cheesecloth into a clean pot. Bring to a boil.


Give a couple of the bones to the dogs


Add half a cup of fish sauce and bring to a boil. Reduce heat to simmer. In another pot, bring 4 quarts of water to a boil. Add noodles and drain immediately. Do not overcook noodles.


Layer noodles, sliced flank steak and the two bolws of vegies in to soup bowls.


Bring broth to a rolling boil, then ladle into soup bowls.


Add the sliced sirloin and garnish with stuff from the sides plate.
