Denver was getting a late spring snow blizzard so I thought the smell of chili in the house slow cooking all day was a good idea. After a quick trip to the store I assembled all the ingredients.


Seed and core 3 medium tomatoes and coarsely chop one large sweet onion. Peal two garlic cloves and then combine 2 teaspoons of paprika and a ¼ teaspoon of Mexican dried oregano.


Blend the above 5 ingredients


Put 4 lbs of course chili grind beef into a pot and add the puree.


Mix the beef and puree and them put to one side for a while to let the flavors combine.


Clean 4 bunches of scallions and then coarsely chop them


Clean, core and seed 5 green bell peppers and then coarsely chop them.


Seed 8 Serrano peppers and then finely chop the peppers together with 5 garlic cloves.


Add the scallions, green peppers, garlic and Serrano peppers together with 2 tablespoons of bacon fat and 1 lb of spicy chorizo sausage to a very large pan.


Over a medium heat cook the above ingredients for about 10-15 minutes until it looks like this.


Put together the (first) wave of spices. 2 tablespoons of cumin (not shown), 2 teaspoons of salt, 3 tablespoons of hot chili powder, 3 tablespoons of medium chili powder and 2 tablespoons or cayenne pepper.


Add the beef and puree mixture, the vegetables and sausage mixture, the spices and 3 cans of light beer to a big pot.


Bring to a boil and then simmer for about 6 hours (two more waves of spices will be added at hour 4 and just before its ready).


At about this time in the process the wife will be pissed at the mess you’ve made of the kitchen and start cleaning up for you. This is an excellent time to go out to the garage and “work” on the Jeep (AKA drink beer).


Well… I don’t have much to show for 4 hours of “work”. I did install some seat covers that I got from Phil at TrailDuty the other day. I also started ripping the dash apart for an ambient lighting project I’m working on, but that’s about it. Too many beers and I got lazy I guess ;)


At hour 4 I added some more spices to the chili. 1 tablespoon of chili powder, 2 teaspoons of ground cumin and a teaspoon of salt. 2 more hours to go.


Just before it was ready I put together another batch of spices and got the capsicum chili oil out to really jack it up.


It’s chili!!!
